Whatever the weather or season, it’s always a good time for pancakes. Cinnamon and sugar is still my favourite filing.
To add to your delight, cinnamon is full of heath benefits . It helps defend against cognitive decline and protects brain function. It fights infections and viruses. It also helps fight diabetes, and contains anti-inflammatory properties.
So go ahead and enjoy those guilt-free pancakes.
Method
For the filling mix sugar and cinnamon together in a small bowl and set aside.
For the batter:
Sift dry ingredients together.
Add milk, oil, eggs and lemon juice.
Beat into smooth mixture.
Allow to stand for a few minutes.
Put a tablespoon of oil into a non-stick pan and heat to a medium temperature. WARNING: if the pancakes stick to the pan, the pan is not hot enough.
Coat the bottom of the pan with some batter.
Cook until the batter appears dry then flip it over and cook on the other side.
Sprinkle with the cinnamon and sugar and a touch of lemon juice, then roll up (or fold).
A treat the whole family can enjoy.
