Old-fashioned bobotie

I have to admit Bobotie is one of my most favourite dishes. The spicy simplicity and sweet taste is so typical of South Africa’s favourite foods. A recipe passed on from generation to generation. In fact it is so wonderful even the super stores are trying to copy this wholesome homemade dish.

  1. Heat oven to 180℃.

  2. Soak bread in milk.

  3. In a large frying pan, heat oil, add onions and garlic and fry until soft.

  4. Add curry powder, turmeric and salt.

  5. Add mince and fry for 8 minutes.

  6. Add chutney, Worcester sauce, apricot jam and brown vinegar.

  7. Add sultanas.

  8. Remove the bread from the milk and add it to mince and stir.

  9. Add eggs to milk and whisk lightly.

  10. Spoon the mince into a baking dish and add egg mixture.

  11. Place bay leaves on top and bake for 50 minutes.

Serve hot with rice, chutney and banana.
