Pork roast with apple sauce

There is something rather marvellous when it comes to a good pork roast.  The crispy crackling, flavour infused meat. The really good part about this dish is the ease and simplicity of making it, allowing you more time with your family while it is simply sizzling away in the oven. The flavour of the apple sauce with the juicy pork reminds me of all the good times with my grandmother, better known as Ouma.

Method

 

  1. Pre heat oven to 240℃

  2. Using a sharp knife, score pork rind by making shallow 1cm deep cuts into the pork.

  3. Using kitchen string tie pork at 2cm intervals.

  4. Cut a deep slit into the pork inset the garlic and rosemary.

  5. Place in the oven for 40 minutes or until rind blisters.

  6. Reduce heat to 180℃ roast pork for 1 hour.

  7. Remove from oven allow to stand for 15 minutes before carving.

  8. Serve with apple sauce.

 

Make the apple sauce

 

  1. Peel and core the apples.

  2. Place in water and simmer until soft approximately 10 minutes.

  3. Add sugar and cinnamon and blend.
